VEGGIE PANCAKES (latkes)
4 cups grated veggies (potatos, zucchini, carrots, onions, garlic, yams, squash or any mix of these)
1 cup flour
2 eggs
sprinkle of spices, salt and pepper or we use yellow Mrs. Dash
peel and grate veggies into a bowl and mix
add flour, eggs and spices
mix well until you can form patties
fry like a pancake until golden on both sides
excellent with a side of ranch dressing
ROASTED CAULIFLOWER
2 cups cauliflower divided into florets
2 tbsp olive oil
2 tbsp lemon juice
garlic (optional)
Parmesan cheese
in a bowl place cauliflower florets, sprinkle with olive oil, lemon juice and grated garlic. Mix well put in roasting pan mid oven at 425' for 25 minutes stirring after 15 minutes.
Last five minutes before your done sprinkle with parmesan cheese.
I like to add whole garlic bulbs in the corners. Peel off most of the outside paper and snip off the tips of each clove. Drizzle with olive oil and cook with the cauliflower. Extra yummy treat.
ROASTED TOMATO SAUCE
In one large roasting pan add blanched (skinned and cored) tomatos, onions, garlic, celery, basil and peppers. Roast in oven at 350'f for one hour with the lid on. Lower to 300'f and remove lid, stir occasionally until desired thickness. This is then ready to serve or can.
*** instead of roasting in the oven, simmering in a crock pot works wonderfully also
